The requirement for an alternate (and its higher minimums) is actually what allows you to go. It means that within the range of your fuel tanks there _is_ an airport where you might be able to land without too much trouble should the weather deteriorate.
You can pick another alternate in flight and a that time, the minimums required are lower. But during the planning phase of your flight, always remember that you rely on forecast (basically someone out there guesses what it's going to be like by looking into a crystal ball), not observations.
